Soils

The soil in the region is characterized by being calcareous clayey and providing small grapes and bunches with loose grains, which produce concentrated musts with complexity, highlighting the typicality of this terroir. It coexists with a temperate climate, with cold winters and very hot summers. Thanks to the combination of several factors, such as the maritime influence of the southern zone by the Río de la Plata and the Atlantic Ocean, excellent results can be obtained in the cultivation of the vine.

HISTORY OF TANNAT-MERLOT -- SINGLE VINEYARD LOT 1 & LOT 2

This wine is a blend of two portion from the same vineyard. The Tannat-Merlot decision was made after many meetings, where we decided that we wanted to make a wine that reflected the terroir of Colonia del Sacramento, which has a history when it comes to viticulture. We wanted to have a structured wine with sweet tannins and very fruity. The best grapes from the vineyard were selected from an area of our Tannat and Merlot vineyards, which met all the analytical and sensory parameters we were looking for. The grapes are harvested manually at their optimum point, and they are cut from the early hours of the morning to later be transported in boxes or in bulk to the winery where they are processed and enter the fermentation tanks.

HISTORY OF PINOT NOIR ROSE -- SINGLE VINEYARD LOT 2

This “Pinot Noir Rose” wine is from a Single vineyard lot. Making that wine for the US market was a conscious decision. It allows the United States to discover the unique Pinot Noir flavor of that terroir, which is smooth, dry and still fruity, so different from many too sweet rosés. The producer and the winemaker decided that they had to make this unique Pinot Noir. Many Pinots are not fully appreciated, but this one has the opportunity to be a class of its own. The best grapes were selected from our Single Pinot Noir Vineyard, which met all the analytical parameters for a balanced and special wine.

 

OUR PROCESS

Three Key Phases

Harvest

The grape harvest, also calle vintage, start at the end of February and the beginning of March, the good weather favors the development of the grapes, which allows them to reach an excellent maturity.
For our premium line wines, the harvest is 100% manual, discarding all types of weeds that may exist and with a rigorous quality control from the beginning, which is the planting and care of the grape, until the final product.

Processing & Aging

The vines go through a strict quality process that consists of the gentle extraction of the stems, cold soaking of the grapes for 48 hours, and then the natural yeasts that exist in them cause the slow classification of the alcohol. The wine juice is stirred twice a day and then stabilized. Later, malolactic fermentation takes place (transformation of malic acid into lactic acid to soften the wine) and this is where some acidity is lost and the flavors become more complex and smooth on the palate. After fermentation, the wines have their maturation that consists of 12 months of rest in modern stainless steel tanks of excellent technology and then between 18 and 24 months of rest (if they are red wines) in bottles with natural cork.
Our stainless steel tanks allow us to regulate the temperature to obtain quality and fruity wines, maintaining the qualities of the fruit without the additions that the wood provides. As a result, Hacienda del SACRAMENTO wines are unique wines, with their own authenticity, their own identity and well defined that, when tasted, highlight the flavor of the variety of wines from the terroir of Colonia del Sacramento.
Our wines are fine and their grapes come from our own vineyards that are harvested manually and the grapes are not mixed with grapes from other plots.

Spontaneous fermentation and commercial yeast. Malolactic fermentation. For our premium line of individual vineyard wines we use modern stainless steel tanks that allow us to regulate the temperature. Our range of fine wines are wood-free.
